The 2011 Shiraz was crafted in the 1888 Gravity Flow Cellar. Built into the hillside on a series of terraces, the world-class winery is geared towards small batch parcels for super premium table wine. Gravity guides the flow of grapes down through the winery to deliver gentle extraction of colour, flavour and tannin. The Shiraz was fermented in open top fermenters and then matured for 14 months in seasoned French oak puncheons.
An elegant, red fruited Shiraz, with high aromatics of licquorice and cherry. Maturation in seasoned French oak has retained a fresh mouth feel, whilst weaving a supple tannin structure with and a lick of savoury spice.
