Seppeltsfield's DP116 is crafted using the Palomino variety, renowned for its neutral flavour profile and suitability to dry Apera styles. The DP116 is similar to the DP117 dry flor, where a layer of yeast (flor) adds palate complexity in the form of aldehydic characters. This layer of flor however is later removed with the DP116, prompting oxidative maturation and the development of subtle nutty flavours.

History

With a proud and priceless legacy dating back to 1851, Seppeltsfield is Australia's most iconic wine estate. Seppeltsfield was established in the Barossa Valley by Joseph and Johanna Seppelt just 15 years after the European settlement of South Australia. One of the largest and most modern wineries in the world of its time, Seppeltsfield went on to thrive as an artisan community throughout the early 1900's. Steeped in rich Barossan heritage, the estate is considered a true national treasure which helped shape the history of the Australian wine industry. As a new dawn rises over Seppeltsfield, our passion is to return the estate to its artisan roots and continue the enduring legacy of the Seppelt family.

The Seppeltsfield Solero Collection is inspired by the traditional Spanish and Portuguese 'fractional blending' method of aging wines. This system delivers high quality and style consistency by blending younger wines into old. After utilising only the very first cut of free-run juice and fortification with a neutral spirit, the DP116 Aged Flor Apera is matured in our Solero nurseries to an average age of 16 years. Seppeltsfield's historic Solero nurseries are identifiable by the carefully stacked barrels in which they gracefully mature.
